I usual begin a watercolor session by painting postcards (if it’s a one-sided card, I use 300 lb. paper. If it’s a folding card, I use lighter weight paper.) It’s a good change to warm up, and you end up with something you can use. As most watercolorists know, it is much easier to paint small than large, so it is also a confidence builder.
